Have A Prosperous 2010 With Lentils

In several regions of the world, this is the food that brings fortune. As peas, lentils also evoke death and rebirth, the grain buried in the earth reborn multiple grains.

Lentil Soup

Ingredients:

  • 1 pound of lentils
  • 3 quarts of water
  • 2 medium onions
  • 2 garlic cloves
  • 4 tablespoons olive oil
  • Salt to taste
  • 1 teaspoon coriander seeds
  • 2 large potatoes and 1 lemon

Preparation:

Soak the lentils in water for 1 hour. Cook until tender. Sauté onion and minced garlic in olive oil and add to the lentils, along with salt, coriander and chopped potatoes. When the potatoes are tender, serve the soup sprinkled with lemon juice.
